dc.description.abstract Aflatoxins are mycotoxins mainly produced by two species of Aspergillus (A. flavus and A. parasiticus). Aflatoxins are known to be genotoxic and carcinogenic, and their exposure to food materials should be kept as low as possible. The present study was, therefore, directed to investigate the effect of alkali refining and other factors on the removal of aflatoxins; samples of groundnut seed and groundnut oil were collected from different expellers in Wad Medani and Khartoum cities. The samples were investigated for their fungal count using PDA medium and for their aflatoxin contamination using TLC technique. Most of the seeds were found damaged (average = 40.31%). The sound intact seed average is about (21.5%). Almost all the seed samples were found contaminated with aflatoxins. However, the results on the microbial content of the seeds showed that the sound intact seeds were free from A. flavus and aflatoxins. On the other hand, most of the oil samples were found contaminated with A. flavus and other fungi. The refractive index of the groundnut oil is the same for the refined and unrefined oil and it was about 1.4700. The free fatty acids content of the groundnut oil samples are 0.2 - 0.47% for the unrefined oil and 0.045 - 0.05% for the refined oil samples, while the Peroxide value of the groundnut oil samples were in the normal range (5.92 - 9.9 for the crude unrefined oil and 13.14 - 17.8 for the refined oil). The acid values, on the other hand, were in the range 0.39 - 1.09 for the unrefined and were 0.08 - 0.094 for the refined oils. The results indicated that the alkali refining processes (degumming, neutralization, washing and drying) of the groundnut oil has no effect on the removal of aflatoxins from groundnut oil. en_US
